How to Make Sourdough Discard Coffee Cake Muffins
Step 1: Preheat the oven and prep the pan
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with tulip parchment liners.
Step 2: Make the streusel
In a bowl, whisk together the flour, brown sugar, granulated sugar, and cinnamon. Add the room-temperature dairy-free butter and rub it in with your fingers, or cut it in with a fork, until the mixture is crumbly and pea-sized. Set aside.


Step 3: Make the dairy-free buttermilk
In a small cup, combine the dairy-free milk and apple cider vinegar (or lemon juice). Let it sit for 5 minutes to curdle slightly.
Step 4: Mix the dry ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.

Step 5: Mix the wet ingredients
In a separate bowl, whisk together the sourdough starter, curdled milk mixture, oil, egg (or flax egg), and vanilla until smooth.
Step 6: Combine the wet and dry ingredients
Pour the wet ingredients into the dry ingredients. Fold gently with a spatula just until combined. Do not overmix, or the muffins will turn dense.
